If you’re looking for an easy way to prepare a whole chicken, look no further! Spatchcocking only takes a few minutes, and results in a more uniformly cooked bird with more crispy skin than if it were left in its original state. Plus, spatchcocking reduces the amount of cooking time required.
To Spatchcock a Chicken:
1. Place the bird breast side down on a cutting board.
2. Using sharp scissors, cut along the spine on both sides.
3. Once the spine has been removed, flip the bird over and press it flat.
4. Brush the skin with melted butter or oil.
5. Season with your favorite blend of herbs or spices.
6. Cook! A spatchcocked chicken can be roasted in the oven, cooked on the grill, or smoked.
